Each winter, as temperatures fluctuate, the sugar maples at Cope Environmental Center begin their age-old process of sap flow. By tapping the trees, we collect this clear, watery sap and boil it down, transforming it into rich, golden syrup—an effort that takes about 40 gallons of sap to make just one gallon of syrup. This seasonal tradition connects us to nature’s rhythms and the sustainable harvest of one of its sweetest gifts.
