Each late winter at Cope Environmental Center, the quiet woods come alive with one of nature’s sweetest traditions making maple syrup straight from the tree. As temperatures rise above freezing during the day and drop at night, sugar maples begin to move sap through their trunks. Small taps gently collect this clear, slightly sweet liquid, which is then carefully boiled down over steady heat until it transforms into rich, golden syrup.
